A diet that sustains the planet | Walter Willett | TEDxBoston
Can our food choices impact not just our physical health, but the health of the planet, as well? A renowned nutrition and epidemiology expert led the effort to answer this question, looking for patterns across a stack of inputs, including 40 years of data from 300k longterm health study participants. The result was the development of the Planetary Health Diet, a framework that is flexible to differences in cultural preferences, nutritional needs, and food systems. With food production as a major contributor to emissions, widespread adoption of the eating plan could lead to substantial reductions in greenhouse gas emissions, fertilizer needs, and cropland use. Walter C. Willett is a physician and nutrition researcher. He is the Fredrick John Stare Professor of Epidemiology and Nutrition at the Harvard School of Public Health and was the chair of its department of nutrition from 1991 to 2017. He is also a professor of medicine at Harvard Medical School. Willett is the principal investigator of the second Nurses' Health Study (NHS2 or NHS II), a compilation of studies regarding the health of older women and their risk factors for major chronic diseases. He has published more than 1,500 scientific articles regarding various aspects of diet and disease and is the second most cited author in clinical medicine.
